10 Ways to Use Mustard
Vinaigrette. Mustard dressing is classic on tender greens, but it's also delicious with turnips, beets, or a zippy coleslaw.
Roasts. To create a beautiful crust for a leg of lamb, pork loin, or turkey breast, rub it with herby mustard before roasting.
Pasta. To add acidity to a cream sauce for pasta, add a few spoonfuls of grainy mustard.
Mashed potatoes. To cut through the richness of mashed potatoes, add some mustard. Then sprinkle bacon on top.
Fish. Sturdy fish like salmon and tuna are wonderful with a mustard crust. Brush it on salmon fillets before broiling or on tuna before searing.
Mussels. Swirl mustard into lager-steamed mussels and garnish with dill.
Butter. Blend mustard with butter for an awesome toast topping or deliciously complex roasted vegetables.
Eggs. Mustard is, of course, key to great deviled eggs. But it also makes a terrific sauce for poached ones.
Chicken. Mustard brightens chicken stews. It also makes a sensational marinade for grilled chicken.
Spaetzle. For a more interesting version of the German dumpling that will still go well with lots of stews, add mustard.

Mustard is yellow because of turmeric. Mustard seeds themselves are quite brown. English speakers have been calling this color “mustard” since the 1840s, and this whole time, we've been giving credit to the wrong spice.
